Skinny Baked Tilapia

       Boy am I feeling the love these days!  I just had to share how happy I am that so many people are enjoying Chew Love!  When I first started this blog I would hear “You are so good”, “The food looks amazing”, and “Keep up the great work” from my husband, mom, and dad.  Now I will always appreciate and love hearing kind words from them, but they can be a little biased.  I can’t believe the amazing comments I read and hear from friends and friends of friends and it makes me feel SO GOOD!  I forget that when I post these recipes, people are actually going to try them out….and I am thrilled you are trying and liking them!  So I just wanted put out a very heartfelt thank you, especially to the following ladies for all your constant kind words and support for Chew Love: Stefanie, Caroline, Lindy, Allie, Liz and Christy B!  Please continue to spread the word and PLEASE send me some of your favorite recipes to try (Christy I need to try your famous chicken noodle soup)!

Today I am posting a recipe for Skinny Baked Tilapia.  Why is the word skinny in the title, you might ask?  Because all the spices used are metabolism boosting and good for you. I’ll take that!  It turned out really light but with a hint of a kick.  A very nice Spring time dinner.  I served the tilapia fillets with roasted sweet potatoes and a spinach salad.

Skinny Baked Tilapia

What you need:

  • 1 lb. Tilapia fillets
  • 1/4 cup olive oil
  • 1 tsp. paprika
  • 1 tsp. ground ginger
  • 1 tsp. dried mustard
  • 1 tsp. ground black pepper
  • 1 tsp. italian seasoning
  • 1/2 tsp. garlic salt
  • pinch of red pepper flakes (you can add more for a bigger kick)

Preheat over to 375 degrees.  In a small bowl combine olive oil and spices and mix well.  Dip each tilapia fillet into the seasoning mixture and place on a baking sheet (lined with parchment paper).  Bake for 10 minutes or until cook and flakey.
