In just a few hours we will get to watch the opening ceremony for the 2012 Summer Olympics and I am so excited! I absolutely love the summer Olympics. My favorite events are gymnastics, running and swimming. It is amazing to me what these athletes can do and it always gets me motivated to kick up my workout routine. I think the London Olympics are going to be one of the best. What is your favorite event of the Summer Olympics?
The other day I made this delicious dinner and I have to say that I am chomping at the bit to make it again. It will definitely be a staple in our home when fall and winter come around because it is very hearty and would be perfect for those cold evenings when you need to warm your soul. The broth in this dish is killer! I used bone in and skin on chicken thighs. You could use breasts if you wanted to, but I highly recommend that you choose bone in, it will add a lot of flavor. Its packed with good-for-you veggies and since it is a one-pot-wonder it make dinner so easy anyone can do it. You just throw everything in a pot and your done.
One Pot Chicken and Veggies
What you need:
- 4 bone in chicken thighs (you can use breasts here)
- 2 celery stalks, chopped
- 1 yam, chopped
- 4 carrots, chopped
- 1/2 onion, chopped
- 1/2 cabbage, chopped
- 1 cup chicken broth
- 1 T Italian Seasoning
- pinch of turmeric
- salt and pepper to taste
- 3 T garlic flavored grape seed oil (this is what I used, but you could use Olive Oil and 2 cloves or garlic here)
Preheat oven to 350 degrees. Season chicken with salt, pepper and pinch of turmeric and place in the middle of a dutch oven or large roasting pan and set aside. In a large bowl combine all vegetables, italian seasoning, grape seed oil and 1/2 of the chicken broth. Season with salt and pepper and mix everything together well. Pour veggies around the chicken and pour the other 1/2 of the chicken broth oven the chicken. Cook in the oven, covered for about 45 minutes (or until chicken is done and veggies are soft).
