I am so excited to share my new favorite way to cook potatoes! I found the recipe on Pinterest from another blogger called For the Love of Cooking. I have made them twice already and in 2 different ways. I have the recipes below for both. Rex even turned to me and said “You shouldn’t make potatoes any other way.” Yes, they are that good! They are crunchy on the outside and soft on the inside and the thing I love about them is you can change them up depending on the spices and toppings you want to use. Not to mention they are extremely easy to make, which always makes me happy! This recipe is sure to be a favorite with your family. My mouth is watering just thinking about them. I can’t wait to make them again!
Here is how you make them:
- Place red potatoes (or any other small variety) in pot of boiling water and boil until fork tender.
- Preheat oven to 400 degrees and on a baking sheet drizzled in olive oil (you don’ want the potatoes to stick to the pan), place the potatoes on the pan and lightly mash with a potato masher.
- Drizzle with olive oil and season with your favorite seasonings. Cook in the oven for about 25 minutes or until the ends start to crisp up.
For the first batch I seasoned with Salt, Pepper, Italian seasoning, and Rosemary. I served these with Momo’s Pork Chops.
The second batch (which might have been my favorite), I seasoned with Salt, Pepper, Garlic Powder and topped at the end with sharp cheddar cheese. I served these with Cabbage Soup.
